Whole 30: Day 1, Meal 3

Tonight, I roasted up a chicken. Rotisserie chickens from the store are easy, but have sugars and preservatives which are not Whole 30 compliant. It took awhile, but was a great way to warm up the apartment and make it smell delicious! Adding fennel to the roasted vegetables really kicked up the flavor! Had a salad on the side with homemade ranch.
