Bahan:
300 g bengkuang, kupas, serut kasar
300 g mangga muda, kupas, iris bentuk korek api
1 buah (500 g) nanas, kupas, potong kecil-kecil
200 g mentimun, iris tipis
200 g buah jambu air, cincang kasar
200 g buah kweni, kupas, cincang kasar
Kuah:
10 buah cabai rawit
200 gula jawa
50 g gula pasir
11/2 sdt garam
2 sdm air asam jawa
½ sdt terasi
150 g kacang tanah tanpa kulit, goreng
350 ml air panas
Cara membuat:
Haluskan cabai, gula jawa, gula pasir, garam, dan terasi. Tambahkan kacang tanah goreng, tumbuk halus.
Campur bumbu halus bersama semua bahan rujak. Tambahkan air, aduk-aduk hingga buah mengeluarkan air.
Simpan dalam lemari pendingin.
Sajikan dingin.
