The minced meat is a wildcard ingredient in the kitchen because it lends itself to a thousand uses. It can become the dressing of a first course, or the stuffing of a flan, a mess or a vegetable and still a delicious second for the whole family.
Types of minced meat
In order to prepare meatballs and meatloaf, it is important to choose a milled meatballs that also has some fat part. Belly and scalpel are the best parts to grind of veal, pork are used shoulder and bacon, while for white meat, usually very lean, it is fine anywhere, but to get soft meatballs always add a creamy part of ricotta or robiola.
For a good meat sauce you usually grind beef and pork together, while for the hamburger the ideal cuts are sirloin, neck and bow of beef that can also be ground together.
How to choose and store the milled product
Always ask your butcher to grind the meat at the moment, both for the sake of freshness and hygiene and because very often the minced meat already ready is made with pieces of mixed waste meat.
The minced meat can be kept in the refrigerator for a maximum of three days because it then becomes dark and smells badly. If it is fresh, you can freeze it in freezer plastic bags or in hermetically sealed containers. You can also freeze the meatballs or meatloaf after preparing the dough.
