Whole grain Cous Cous, Tuna, Corn With Red Kindney Beans
Pictures Taken with my Huawei Mate 9
Today was one of those days, I had no time to prepare my usual lunch. So I had to figure out a quick lunch that was going to keep me filled for the afternoon and at the same time having all the nutrients that I needed.
So I came up with the above recipe. It's really simple inexpensive and takes approximately 5 to 6 minutes to prepare.
Here are the ingredients:
Wholegrain cous cous, canned corn, canned kidney beans, virgin olive oil, vegetable or meat stock, one can of tuna in water, and it desirable cayenne pepper.
(If you're picky on what you eat you may substitute the canned vegetables with frozen or fresh vegetables. Also the tuna can sometimes be found in glass jars)
I don't usually eat a lot, so the measurements of the amount of cous cous to use depends on you. You may follow the instructions on the container.
Instructions
Add the vegetable or meat stock in a pot of water and bring to boil. Please remember sometimes the vegetable and meat stock if it's not homemade can be a little salty. So please use sparingly.
Then add the cous cous and let stand for about 5 minutes.
Drain the water from the canned tuna also the corn and beans.
Add a teaspoon to tablespoon of Virgin Olive Oil to the cous cous.
Then combine tuna corn and red kidney beans.
For taste you may add a dash off salt and cayenne pepper.
That's it!
Buon appetito 😋
