This is a very easy money-saving project and a simple introduction to growing food.
Here are some scallions. I left the bottom 1-2 inches intact and put them in some water. They have already grown overnight.
Once they grow a little you can transplant them into soil...There's also some celery regrowing here.
You can do this with many other vegetables. Here are a few examples:
