Traditional Moroccan Couscous Recipe
Couscous is one of the most iconic dishes in Moroccan cuisine, celebrated for its rich flavors, wholesome ingredients, and cultural significance. Ingredients:
For the Couscous:
500g couscous
3 tablespoons olive oil
500ml water or vegetable stock

1 large onion, finely chopped
3 cloves garlic, minced
3 carrots, peeled and cut into chunks
2 zucchinis, sliced
1 small pumpkin or butternut squash, cubed
1 large potato, cubed
2 tomatoes, peeled and chopped
1 can of chickpeas, drained and rinsed
1 teaspoon ground cinnamon
1 teaspoon ground turmeric
1 teaspoon ground ginger
1/2 teaspoon paprika
Salt and pepper to taste
Fresh parsley and cilantro for garnish
For the Meat (Optional):
500g lamb or chicken, cut into pieces
2 tablespoons olive oil
Salt and spices to taste
Instructions:
Prepare the Couscous:
In a large bowl, pour water or stock over the couscous, ensuring it’s just enough to moisten it. Add olive oil and a pinch of salt.
Cover and let the couscous absorb the liquid for about 10 minutes.
Fluff with a fork to separate the grains.
Cook the Meat (Optional):
Heat olive oil in a large pot. Add the meat, season with salt, cinnamon, turmeric, ginger, and paprika.
Brown the meat on all sides, then add enough water to cover it. Simmer for about 45 minutes or until tender.
Prepare the Vegetable Stew:
Heat olive oil in a large pot. Sauté onions and garlic until fragrant.
Add the carrots, zucchini, pumpkin, potato, and tomatoes. Stir in the spices (cinnamon, turmeric, ginger, and paprika).
Pour in 500ml of water or stock, bring to a boil, then lower the heat and simmer for 30 minutes.
Add chickpeas in the last 10 minutes of cooking.
Assemble the Dish:
Arrange the couscous on a large serving platter, forming a mound.
Create a well in the center and spoon the vegetable stew into it. Place the meat on top if using.
Garnish with fresh parsley and cilantro.
