⚬2 small banana, overripe
⚬1 Kiwi fruit, peeled and finely chopped
⚬1/4 cup strawberries, finely chopped
⚬1 cup rolled oats
⚬1 free-range eggs, whisked
⚬1 tsp baking soda
Preheat the oven to 180C.
Line 6 holes of a muffin tin with cupcake liners.
In a mixing bowl add the banana and mash with a fork.
Add all the other ingredients to the bowl and mix thoroughly.
Scoop the mixture evenly into the prepared muffin tin.
Bake for 25-30 minutes, or until golden and firm.
Allow to cool completely in the tin before serving.
Leftovers can be stored in the fridge in an airtight container for 3-4 day
