Redfish

this is a redfish I had to throw back because we are allowed 1 per person or 2 to the boat and I had already caught one earlier. I grew up with them being called channel bass but after a chef cooked one and called it blacken redfish everyone started calling them redfish, I like to eat them pan seared with onions. The last one we cooked my husband pan seared it and he cooked apple covered in cinnamon and sugar and put it on top of the fish, it was so good, I did not think baked apple (microwaved the apple) and fish would be good together but o my, it is good.
