So it's been 2 weeks since I started my sweet potatoes in water. We are already starting to see the formation of slips!
What are slips? Sweet potatoes aren't started by seeds. You have to take a mature sweet potato and grow slips (shoots). When the slips are big enough, it's time to remove them and place the slips into water in order to develop their roots system. Once they have a strong root system, they can be planted in a pot of soil, and later to be transplanted into your garden.
Where I live (Northern Canada) sweet potatoes aren't typically grown here, because they are a tropical crop and require much warmer soil than the climate here can provide.
However, there is a trick around this, that I used to grow my first ever sweet potatoes last year.
