THE EDIBLE REDBUD SEED POD

In case you missed the flowers, you can try the seed pods!


For some years now we've been enjoying the delicious flavor of the redbud flower. These trees are incredibly beautiful in the spring when the tiny pink flowers cover the otherwise bare branches before the leaves even appear. Many enjoy adding these delicious flowers to salads or soups, and they make a tasty snack when you are on the go in the wild.

Once the beautiful and delicious flowers pass, seed pods that resemble flattened pea pods appear. When they are young and tender, many people will use them in stir frys or enjoyed them as a cooked vegetable. While we've known about this for a while now, it wasn't until the small redbud tree right in front of our house became covered with these seed pods that we ever tried eating them. For us, it's just one more wild edible readily available on our property, and we really appreciate that!
