My grandmother sent me a parcel of organic products she prepared herself this week. There were many products she prepared with her own hand labor. One of them is Tarhana! I have eaten tarhana before, but this is the first time I have seen Tarhana fermented in a jar like this. I immediately called her and asked her how I should prepare it. When I first opened the jar, the tarhana was overflowing out of the jar, when I saw this, I thought the tarhana was spoiled, but when she told me that it was fermented, I was relieved. She told me that there were many vegetables in it and she urged me to make this soup and eat it often. I get sick very quickly in winter days, so I need a lot of healing foods from the village, and this soup became my favorite! I want to share with you the recipe that my grandfather gave me.
Necessary ingredients ;
3 spoons of tarhana
1 spoon of tomato paste
2 spoons of oil
Salt
And about 5 liters of water
Preparation ;
First of all, I take the fermented Tarhana in a bowl and mix it with 250 ml of water and bring it to a liquid consistency.
Then I roast the tomato paste and oil in a saucepan. I add 5 liters of water to the roasted tomato paste and wait for it to boil. After boiling, I add the Tarhana by stirring slowly and continue stirring until it boils. At this stage, I stir constantly to avoid lumps and after boiling, I cook for another 10 minutes and turn off the stove.
CRUNCHY BREAD!
I also prepared some of my favorite crunchy bread to go with the soup. I love eating crunchy bread with olive oil and thyme! You can make this with any soup and I highly recommend it because it is delicious. Preparing the crusty bread is quite simple. I diced the sourdough bread, added some thyme and toasted it on the stove and that was it! I really wish I could send you the smell... Delicious!
Finally, I put the bread on top of the soup and it was ready to serve. It tasted incredibly delicious and was a joy to eat. I love to have soup with crusty bread in winter and this recipe is very good for me.
