Everyone loves Rainbows. At least I think so. After I came home from work and made dinner Black bean, sweet potatoes tacos. The rain had stopped, the sun came out and there it was.
Oh, the taco recipe :
~8 cups Diced Sweet Potato
~3 Tablespoons Olive Oil, Divided
~3 teaspoons Cumin, Divided
~1 teaspoon Chili Powder
~1 Small Onion, Finely Diced
~3 cloves Garlic, Minced
~2 cans (15 Oz. Size) Black Beans, Drained And Rinsed
~Corn Tortillas
~1-2 Avocados
~1/2 cup Cilantro
~2 cloves Garlic (sometimes I add more, I love Garlic)
~1 teaspoon Salt
~1 Tablespoon Lime Juice
Heat oven to 400ºF. Line a sheet pan with foil. Spread sweet potato on the sheet pan, drizzle with 2 tablespoons of olive oil and sprinkle with 1 teaspoon cumin and chili powder. Toss until evenly coated. Bake in the oven for 45 minutes or until potatoes are tender. Onions and garlic, sauté, Add the beans, remaining cumin, and lime juice. When add the potatoes and mix.
Trust me they are super yummy!
