A pizzeria-pizzeria, without adjectives: noisy and popular, in a replica of the "original" one at Mater Dei, in the heart of the Sanità district in Naples.
The local
How should a pizzeria be? No frills, and convenient. Here's the formula: with just the touch of the colored panels hanging from the ceiling to moderate the background noise. And the ineluctable exposed bricks.
The kitchen
Neapolitan pizza, on the wave of the tradition that Don Antonio Starita has also exported overseas: cornices, fulminating cooking, popular ingredients. Alongside the omelette of macaroni, the montanarine, and other hypereppanting delights of the Neapolitan tradition. Traditional dish pizzas, and some contemporary variations but always in sobriety, and far from "gourmet" temptations.
The pizzas
Mandatory tasting of the daisy: the classic explosive cooking that gives a soft and foldable bottom with the expected "leopard" coloring, the very conformed corniche and pronounced with the beloved blacking blotches. A good tomato sauce, a very dense fashionable mozzarella more popular. If any doubt can arise from the compactness of the pasta - however well drawn - it is then dispelled by the clear night, away from alveolistic delusions. The small crunch of the knife on the edge reassures on the perfect cooking temperature.
Satisfying the small mountain, with the fried dry even if not too fragrant. More normal is the macaroni omelette, which does not obscure the memory of the Neapolitan version.
The cellar
More than a beer, some "craft" but without deepening in depth: it works well the enjoyable "average" in the tankard.

What you ask of a pizzeria: solicitous, precise and smiling.
The bill
It makes bonus counting of pizzas at traditional prices: for a margherita, a taste of fried, a beer and a coffee go away with sixteen euros. Viva!
