Sinigang is a soupy Filipino staple. Often made with pork meat, oxtail is substituted for this particular dish. Garlic, onions, leafy vegetable such as cabbage and tamarind seasoning are the main ingredients making this a soupy flavorful comfort food for most Filipino.
If you're in a Keto diet, the fatty gelatinous oxtail meat would be a perfect meat to use for a sinigang recipe. I used Spinach for the greens and it compliments the dish perfectly.
