Ingredients:
1 cup phool makhana (fox nuts)
4 cups milk
1/2 cup sugar (adjust to taste)
1/4 teaspoon cardamom powder
A pinch of saffron strands (optional)
2 tablespoons chopped nuts (almonds, cashews, pistachios)
1 tablespoon ghee (clarified butter)
A few strands of saffron for garnishing (optional)
Rose petals for garnishing (optional)
Instructions:
Heat ghee in a pan or kadai over medium heat. Add the phool makhana and roast them for a few minutes until they turn crispy and golden brown. Remove from heat and set aside.
In the same pan, add the chopped nuts and sauté them until they turn lightly golden. Remove from heat and set aside for garnishing.
In a separate heavy-bottomed pan, heat the milk over medium heat. Bring it to a gentle boil.
Reduce the heat to low and add the roasted phool makhana to the milk. Let it simmer for about 15-20 minutes, stirring occasionally.
Crush the saffron strands (if using) and add them to a tablespoon of warm milk. Allow them to steep for a few minutes.
Add the saffron-infused milk, cardamom powder, and sugar to the pan. Stir well to combine.
Continue simmering the kheer on low heat for another 10-15 minutes, or until it thickens to the desired consistency, stirring occasionally.
Remove from heat and let it cool slightly.
Garnish with the sautéed nuts and, if desired, a few strands of saffron and rose petals.
