Prior to me migrating onto the Paleo lifestyle, I always looked forward to getting the burrito bowl at Chipotle. Partly because of the flavorful meat and its various sauce offerings, but also due to the aromatic cilantro-infused rice! Now that I am on Paleo, white rice, aka "empty carbs" is a big no-no. So, instead, I substituted the regular rice with "cauliflower rice" and voila, everything tastes fantastic at a fraction of the carb count. It is easy to make and convenient to store. This is surely an effortless way to bring the taste of Chipotle into your home. Enjoy!!
