To make Puri:
- 1 Cup Sooji/Rava/Semolina
- 2 Tbsp maida/plain flour
- 1 Tsp salt
- 1/4 cup + 1 tbsp regular water (not hot)
To make Teekha/ Spicy Pani:
- 5 Cup water
- 3 Tbsp Pani puri masala
- 10-12 Ice cubes
- 1 Tsp hing
- 1 Tsp salt
- 1 Tsp black salt
- 1 Cup pudina/mint leaves
- 1/2 Cup dhaniya/coriander leaves
- 2 Green chillies
- 1 Inch ginger
- 1 Medium lemon
To make Imli/ Tamarind Chutney:
- 100 gm Imli/ Tamarind
- 3 Cup water
- 1 Tsp sauth (dried ginger) powder
- 1 Cup gudh/ jagarry
- 1 Tsp red chilli powder
- 1 Tsp jeera (cumin) powder
- 3/4 Tsp salt
For Stuffing:
- 1/2 Cup boiled dried peas
- 1/2 Cup boiled dried chana
- 1/2 Cup boiled dried moong
- 1-2 Medium boiled potato
- 1-2 Medium chopped onions
