Recipe Kitchen: Patacones Maracuchos

Ingredients:

  • 2 green bananas/intones (for each banana we get 2 patacones)
  • White cheese
  • 2 cups shredded Meat or Chicken (you can be guided by the shredded meat recipe)
  • Lettuce
  • 2 pinto tomatoes
  • 1 small onion
  • Cilantro to taste and parsley
  • Sauces: mayonnaise, mustard, ketchup, garlic sauce, whatever you want.

First, peel the bananas, then cut them in half, and then slice them in half horizontally. It is the same cut of the slices but thicker. Then lightly fry the banana on each side, until it is a little golden, but not completely done. We remove it from the oil and crush them with the help of 2 cutting boards. We will use one as a base and another to exert pressure from above. A recommendation from my part would be to line each board with a plastic bag and grease it lightly, this way we avoid that the banana sticks to the surface of the same one.

Another utensil that we can use to form patacones is a "ball crusher" that contraption that our grandmothers and mothers use to make hallacas. Once we have all the bananas flattened, we fry them again until they are well toasted. Remove them from the fire, add a little salt and proceed to assemble the patacones.

You must place one of base, on that put a little meat or chicken, up salad (made with lettuce tomato, onion and parsley) and a little grated white cheese and finish with another banana cover. If you wish you can add the sauces of your choice, from Ketchup to spicy.
