Elderflower is a recognized immune boosting herb, and right now it is abundantly in bloom in North Georgia.
You can recognize elderflower by the "platters" of white blossoms on large bushes growing in roadside ditches and other wild spaces. The plant is commonly found coexisting with Blackberries, which can make getting to the elderflower a prickly endeavor.
Harvest the elderflowers when they are fully open, showing 5 white petals and 5 pollen covered pistils. Make sure to remove the flower from the stems, as the stems are mildly toxic. The stems won't kill you, but they might cause an upset stomach or some feelings of nausea.
The elderflower can be steeped in sugar water for an elderflower cordial, or you can add 80-100 proof spirits and make a pure elderflower tincture.
Or maybe you want some breakfast (and are not overly concerned about fried foods)! Ever had elderflower fritters? Mix up a light batter, and dip the elderflower cluster in the batter, holding the cluster by the main stem. Then fry until golden brown, again using the stem as a handle. Remember, don't eat the stems! After frying, you can dust with powdered sugar. Delicious!
