Organic lasagna with tofu sausage and zuccini cut in strips for noodles. I sauteed the flat zuccini strips in garlic butter before layering them with ricotta and mozerella cheese, adding the tofu sasage (whch I fried to a crisp first with red onion) and organic tomato sauce. The kids helped me make organic pesto on the side that we spread on bread and baked!
