Been trying to cut down on some calories since the New Year's and glass noodles is perfect. The secret to this salad is the spiciness and the tartness from the lime. I've been making this for years so I have my ideal amount of lime as part of my instinct. You can't put too much because the people eating my get stomach cramps. It has to blend tartly with the palm sugar. Try some next time you are at a Thai food restaurant.
