New Years eve coming, many of us open then Champagne. This is why I wanted to help to choose the proper one!
We drink many times champagne at home, it is always a celebration when we open a bottle.
In the past seven years we tasted many bottles. Some memorable bottles will be shown here:
Bollinger R.D. 1996 - If you like the James Bond movie, it must be on your list!

A Real special one: Blanc de Noir by Bollinger. This made from red grape, but white champagne. The speciality of this bottle, it made from the grapes which survived the Philoxera disease. So this is from the original french grape plants.

Bollinger R.D. 1979 - This vintage has the same age as me
From this first post I only mentioned the Bollinger house. You can go from the simple ones thru the Blanc de Noir. Over vintage it has much more complexity, and harder body. Ideally the maximum age which I recommend is 20-25 years old for those who like the complex, full body ones, and 8-10 years for a fresher one. The older wines looses bubbles, and has much darker color. But together with this, Bollinger is the one who make the sealing professional, the hard layer which protects the cork is really an exceptional one, so in a 40 years old bottle still has bubbles. Tomorrow I will continue with other champagne houses. Stay tuned!
Excellent intro of Bollinger R.D. 1996 and 2003 @cuttie1979. Champagne taste not be changed if drink last 10 years ago. Its open only when you celebration mood. Cheers
