Brinjal salad with balsamic herb dressing

We are particularly fond of brinjals (aubergine/eggplant) and for various reasons, didn't use this one for Sunday Supper, so I decided we'd have it as a side. Served with a fresh herb, garlic and balsamic reduction as a dressing.
