Creamy Roasted Chestnut & Potato Soup (Vegan) - FOOD PHOTO SHOOT

Can I just say that dealing with chestnuts is not exactly the most fun task in the world, which I’m sure any of you who’ve done it would agree with me.


They’re just sort of high maintenance compared to what you get from them. However, I really like using them and I’ve gotta say I’ve dealt with much worse ingredients in my foodblogging past so it’s not too bad to mess with them a few times a year. Plus, you all know how much I love to get into themes and stuff, and come on, chestnuts and Christmas time go together like pb&j! Am I right? Am I right????


Before I get into that, I wanted to ask those of you who celebrate it about your plans for Thanksgiving, do you have any? And if you don't live in the US then do you do any kind of "friendsgiving" or anything? I'm so curious what it's like to not live where it's celebrated.


Alrighty, aside from the chestnuts, this soup is a breeze to make and it has so many of the flavors that I love about the holiday season. I really wanted to get the chestnut flavor in there so I added quite a bit.

The thing is, I don't have a lot of chestnuts available to me here because they grow don't everywhere in this region like they did where I lived in Chile, so if you also live where they are hard to find you can cut the amount in half and you’ll still have a great soup. One more thing, if you want to make it a whole meal you can add some protein like leftover chicken or turkey (if not vegetarian) , or some type of beans would work well also. Just feel free to make it your own.

Okay, so you all have to make this, and if you live up North then take a moment to cozy on up by the fire and enjoy a big bowl of it with me! Hehe, and for those in the south, maybe you can crank up the AC and do the same thing even despite the warm weather.

Delicious!!! Where I live there are many many chestnut trees and I love every recipe with chestnuts, so thanks to share it ^_^

Ingredients

2 tablespoons olive oil
6 cloves garlic, minced
1 medium onion, diced
2 medium apples, peeled and finely diced
4 stalks celery, finely chopped
1 pound (about 3 medium) red skin potatoes, washed and cut into cubes
1 tablespoon fresh rosemary, roughly chopped
1 tablespoon fresh sage leaves, roughly chopped
8 cups chicken or vegetable stock (use vegetable for vegan)
2/3 cup heavy cream or coconut cream (use coconut for vegan)
2 tablespoons flour (or arrowroot starch for gluten free)
2 cups shelled, roasted chestnuts (see this post for how to roast them)
Sea salt and freshly ground black pepper to taste
Instructions

In a large, wide-topped pot or dutch oven heat olive oil over medium high heat. Add the garlic, onion, celery, apples, potatoes, rosemary, and sage. Cook for 7 to 8 minutes, stirring very often, until the potatoes are just starting to soften. Pour in the stock, then cover pot with lid and bring to a boil.
Chop the chestnuts into small pieces and add to the pot when it starts to boil. Remove lid, reduce heat to medium low, and boil uncovered for about 20 minutes until the potatoes are very soft.
Whisk the cream and flour together in a small bowl or glass until smooth, then stir it into the soup.
Continue stirring continuously until the soup starts to thicken. Season to taste with salt and pepper then remove from heat and allow it to cool off just a little bit before serving.
Notes

If you'd like to make this a complete meal you could add some meat or beans depending on your preference. 🙂

We don't celebrate Thanksgiving in Nicaragua. Usually a rag tag bunch of ex-pats from at least four different countries are represented at a gathering that we make as festive as possible with traditions from each of those different countries. Lots of food, drinks and merriment for all.

That sounds like a lot of fun. I do miss our expat friends in Chile. It is nice being around like minded people

Dee-lish! Yeah, I can remember the taste and texture of chestnuts from a Christmas long ago, and I can imagine your soup here. I've only ever eaten chestnuts by themselves but I bet they're nice with butternut squash and potatoes. Will you share your recipe?

Did you use wild chestnuts? We usually just get ours from the supermarket, which are usually not very good. How did you crack them open before you cook it? We always have difficulty in that. Nice new profile picture BTW😊

These chestnuts came from a market, however some of them I did collect from a nearby tree. They were actually very similar and difficult to tell any difference. I roasted them in order to crack them open.

chestnuts are messy to open, always break into pieces...
that's why I like my berries :p

Love the smell of chestnuts roasting during the holidays where I grew up. Yeah, it could be a challenge dealing with them but once in a while is ok like you said. Haven’t had them in soup but this is something nice I’d like to try.

I'm going to my parents' in Arkansas. All the family with nieces and nephews will be there. With chestnuts! That grow on a scraggly tree on their property. It is work to process them. But they are so rich and filling. And it sure connects me back to when chestnut trees were the dominant tree in the Eastern forests. It sure must have been a different place with so much abundant, rich food from those trees.

I like the bowls you are using for your soup! How did you deal with Thanksgiving when you were down in Chile? It must have been your family's own personal holiday. Did Chileans have anything equivalent? Enjoy your Thanksgiving back in the US!

While we were in Chile, we had several expat friends. Where we first lived in Chile, we had some Chilean friends that were mutual friends with some expats and were aware of our US holiday of Thanksgiving. So, we invited them to our dinner, it was a great success. The following three years, we lived in a larger town with more expats so it was generally Norte Americanos, however we did have some Austrians, some Chinese and some Fins. Very interesting international mix for all of our get together's.

Been so busy haven't checked in with my favorite foodie in a while. It's been just shy of 4 months in Thailand and Laos, and suddenly I've got one week left and I'm back tot he US for 10 days. Visiting friends and family in Orlando, Tampa, and Ft Lauderdale, then about 3 weeks in Quito Ecuador to take care of some Business.

Here in Thailand I don't even think or feel like it's autumn or Thanksgiving is around the corner. But this post is a great reminder. Chest nuts! Haven't seen those in a while. Being a bit of carnivore I'd probably go with our full meal recommendation and add some chicken and maybe some fried up crisp bacon as well. Another all pro post! Keep up the great work! -Dan

did you say BACON?! My brothers would certainly agree with you on the meat. From time to time, I try to offer up some alternatives to my followers. However, my audience really does prefer the sweets.

It's funny people love my cooking so much. I think it's because I I try to sneak bacon into just about everything I make, especially if it's got like a savory vibe. From carbonera to chicken pot pie. I'm still yet to meat someone who doesn't love bacon! It's like my secret weapon in the kitchen. If I'm going to use bacon. I chop it up, then fry it off leaving the bacon fat, then saute the vegetables or whatever in that, with no need for any other oils, getting that piggy bacon flavor through out the entire dish. I LOVE BACON!
