Easy Vanilla Cream Custard Berry Tarts - FOOD PHOTO SHOOT

in photography •  7 years ago  (edited)

DSC_1149.jpg

It’s Pi Day tomorrow, so naturally there has to be pie right? Right. Glad we’re all on the same page here.

DSC_1234.jpg

So based on our local weather forecast, I’m thinking we’re done with snow around here. A month ago I might have been sad to see Winter go because I’ve missed having a white Winter season for so many years, but in case you haven’t noticed, I’m basically over Winter and totally ready for Spring. Yes, mid-March is the perfect time for Spring to truly arrive. This is such a random thing to notice unless you’re me, but when I got in the car yesterday and the seat was warmed from the sun rather than its usual freezing cold temp that always makes me cringe.

DSC_1115.jpg

In other recent news, my berry addiction seems to be reaching an all-time high in anticipation of the season changing. I’m so addicted that I’m actually pretty sure I could eat my weight in fresh berries. What’s your superpower?

DSC_1134.jpg

These cute little tarts were a spur of the moment idea I had a few days ago. In fact, the cream was something I’d made with a different recipe in mind, and I had been planning to bake a typical pastry pie with a cooked berry filling. But then I thought about how delicious the vanilla custard would be with some fresh berries and remembered that pi day was so close.

DSC_1164.jpg

Between Springtime coming, Easter, St. Patrick’s Day, and all the other random events around March I always seem to miss Pi Day and I wanted to be sure not to let that happen again this year. That’s when I realized these little pies/tarts just needed to happen.

It’s just a personal preference, but I’ll always choose fresh berries over cooked ones even though I love them cooked also. Don’t worry, if you’re a bigger fan of cooked berries I’ve got all Spring and Summer to share plenty of those kind of recipes, but today’s recipe is all about celebrating the fresh ones.

DSC_1241.jpg

Yeah, so these simple little tarts are super basic. We’re talking graham cracker crust, meets simple vanilla pudding, meets fresh berries, super easy-peasy! You can also make it as a larger pie in a 9-inch pie pan, but you guys know I’m always a sucker for the miniature versions of things, so I chose the more individual size. I used some of the dishes from this Pyrex set, but any ramekins or pie dishes will do. Oh, and this didn’t make it into the photos but a squirt of whipped cream on top is the perfect way to finish these off.

Easy Vanilla Cream Custard Berry Tarts

Prep Time: 20 minutes
Cook Time: 25 minutes
Total Time: 45 minutes
Yield: 6-8 servings

Celebrate all the feels of warmth and sunshine with these simple little vanilla cream tarts with plenty of fresh berries.

Ingredients

Graham Cracker Crust:

1 3/4 cups crushed graham crackers
1/3 cup sugar
6 tablespoons butter, melted
1 teaspoon vanilla extract.

Vanilla Cream Custard:

2 1/2 cups milk
3/4 cup sugar
2 eggs
1/4 teaspoon salt
1/4 cup cornstarch
1 teaspoon vanilla extract
2 tablespoons butter
fresh berries (or fruits)
whipped cream (optional)

Instructions

Graham Cracker Crust:

Preheat oven to 350 defrees F (180 C) and grease a 9-inch or 4 (2-cup) ramekins (I used the 2, 2-cup, and 1, 4-cup, rounds from this Pyrex set). Combine the graham cracker crumbs, sugar, vanilla, and melted butter in a medium mixing bowl and stri to combine. Press into your greased pan(s) and use the bottom of a cup or just your fingers to shape it about 1 inch up the sides. Bake for 10-12 minutes until beginning to brown. Remove and set aside to cool completely while you prepare the custard.

Vanilla Cream Custard:

Heat milk in a medium saucepan over medium heat until very warm but not boiling. While milk is warming whisk eggs and sugar until light and frothy in a medium bowl.
Slowly pour warm milk into eggs while stirring to temper. Whisk in salt and cornstarch until smooth, then pour into saucepan. Return to heat and stir constantly until the first bubble splutters and pops or until thickened. Remove from heat immediately and stir in butter. Pour through a fine mesh strainer into a medium bowl to catch any lumps that may have formed and allow to cool completely. Add vanilla and pour the mixture into prepared crusts.
Chill the tarts in the fridge for about an hour then serve them topped with fresh berries, fruit, and maybe some whipped cream!

Strawberries, blueberries, cranberries... They're not just sweet and sweet, according to a nutritionist study, berries are very nutritious and worth eating every day. The berries contain vitamin C, flavonoids and other antioxidants and rich pectin, which can improve the appearance of beauty and improve constipation. It also contains ingredients to fight bad cholesterol, which can help prevent high blood fat and heart disease. It also helps to flush out toxins and excess fat, which can help you lose weight. Different berries have different health effects. The delicious food you made of these strawberries is really too tempting to give you thumb up.

I, too, believe, that there is nothing better, that fresh berries. One problem is, I'm having trouble finding them in my city. Even if they are sold in stores, often they long lie on the counter and become not quite recent. And the taste of berries from the store is certainly very different from the taste of berries from your garden! I'm glad you got spring, which means the season of fresh berries can be considered open)

yes, Spring is on the way and lots and lots of berries. We also have a mountain berry here called huckleberry, that comes in the Summer

I like this one because you can kind of tailor it to suit all seasons.. Great work. I just started a series on Diet that you might like btw :-)

Thanks @yasminep! Very sweet of you.

perfect taste.

fresh berries is allso my favorite, but unfortunately we dont have them in Israel, so I'll go with kiwi

kiwi works, no problem. Yeah, I'm a kilometer or two away from you. Perhaps we can meet up in Europe later this year

it taste so nice :) haha i can tell it just by seeing it

always so supportive, thanks so much @cityslicker

I love vanilla custard. And....graham cracker crumb crust? I think I prefer that to a pie crust. Person preference of course :)

My superpower? Um....hmmm....Invisible powers. ;)

I can't wait for Ontario strawberries. They are THEEEE best in the world. Solid. Juicy. RED.....sweet. Then when the wild blueberries are ready, then grapes, then my second favorite. Niagara peaches.

I am waiting for asparagus in the next few weeks to pop out of the ground. Best spring vegee.

Can you tell I'm hungry? I shouldn't read your blog when I am hungry.

Nice job!

you have invisible powers, that's awesome. I hope you can share some of those fruits as they become available. I want to know more about those strawberries

Maybe I will. I really haven't ventured out and taken food photos. There is always a first time.

wonderfully prepared so yummy :)

very easy to make this cake. I feel like making it at home...

thanks so much for commenting

you're welcome

I love how you have decorated these with the berries, so pretty! :)

so sweet of you to say, thanks so much @emilyl

This sounds great! I love a good graham cracker crust no matter what's filled inside. I was actually really in the mood for a pudding type thing today and tried a mini creme brulee from a local dessert shop but I really wasn't that fond of it. Wish I would have ran into a dessert like this instead, my pudding craving still hasn't been satisfied :/ I'd love to try this with some soft caramelized roasted apples.

ahh, some caramelized apples, that would be great. Thanks so much for the inspiration @jmido8

wow it looks delicious and the photos are awesome

Very creative

Done resteem

Omg, it's pie day today! I completely forgot, thanks for reminding me!

You're welcome to look at my profile and follow back if you like what you see :-)

well, not pie day, but PI day as in the mathematical formula. And, my creation isn't a pie. Thanks for commenting @leurbanexplorer

I know. Got too many mathematician friends... It's still better to combine the PI and pie days together, which you've done masterfully :-)

These are absolutely divine.............. fabulous job with the photo shoot Tori. Feast for the eyes and taste buds 🍒 🍌🍑🌿🍍🍓🍇

Always a pleasure Dear Tori 🌸💖🌸

Greetings from Indonesia... I make some recipe too but the photo isn't good like you done. Would you mind to see it?

This is so wonderful...yummy and scrumptious...I know what you mean re: Winter...we are covered in snow...and I want to be eating berries...and start enjoying the green colour of our lawns...lol no chance...at least not for a bit...so seeing your post made my tastebuds work overtime...lovely recipe...looking forward to making it :) Thank you! voted

Our past few days were unseasonably warm and most of the snow here has melted. I'm okay with that now. And I'm super excited about everything Spring and Summer bring. I hope you give my recipe a try and if you like, you should make a post about it.

Ah, vanilla cream custard with berries is sooo gooood!!.. I had one on a cruise boat from Finland to Sweden last Sunday. I swear, I savoured every little bite! :)
