But first I'm going to explain something about the project the micrograph is part of. As an Artist inspired and driven by scientific and technological innovations and former medical laboratory analyst, I had seen a lot of beautiful things in the lab and particularly under a microscope. Therefore I wanted to give more insights on our food, food additives and E numbers that we use every day, and often (most of us do this) without question. By creating these micrographs I create story starters, with these story starters I want to create more awareness about the subject (good or bad).
In this case I want to show you the beauty of Potassium bitartrate and its use in daily applications. This cause we often forget that additives like this are (needed) in our food.
So where does it come from? And where is it used for?
Potassium bitartrate is a white crystalline diprotic acid. This aldaric acid occurs naturally in many plants, particularly grapes, bananas, and tamarinds, and is one of the main acids found in wine. It is added to other foods to give a sour taste, and is used as an antioxidant. Other things you can think of when its (crude form beeswing) used in food are:
- Stabilizing egg whites, increasing their warmth tolerance and volume
- Stabilizing whipped cream, maintaining its texture and volume
- Anti-caking and thickening
- Preventing sugar syrups from crystallizing
- Reducing discoloration of boiled vegetables
- Additionally it is used as a component of:
- Baking powder, as an acid ingredient to activate baking soda
So next time you are using Potassium bitartrate in one of its applications envision its beauty.
