Pickled sundried tomatoes can be prepared in different versions. In this post I'm going to present the Apulian recipe as it is the first one I learned.
Ingredients:

- Vinegar

- Capers
- Garlic
- Origan
- Virgin Olive oil

Preparation :
It would be better to choose ripe and very firm tomatoes. Wash them carefully and cut them lengthwise: place them on a trellis, they must be sprinkled with salt and left to dry in the sun, for about a week, taking care to turn them over from time to time and remove them at night, so that they do not absorb excessive. humidity.
Once the seventh day has elapsed, the tomatoes must be washed with a solution of water and vinegar in equal quantities, and dried with a damp cloth: the jars are thus prepared, where the tomatoes are arranged horizontally and diagonally in order to fill the whole container, with the addition of capers, garlic and oregano ( quantities of capers garlic And Origan according your desire and taste), then the jar must be filled completely with extra virgin olive oil. To seal them hermetically, and for greater safety, the jars must be boiled.
