Yellow, warm, soft, polenta is a dish that nourishes the body and the soul ... and is also a great anti-stress! The polenta has a caloric value that is around 260 calories per 100 g, and consists of carbohydrates (77%), proteins (8%), fats (3.5%). The nutritional values of this dish vary greatly depending on the method of preparation: if it is more liquid, then it contains less water, less calories, while when it is more solid it has a higher energy value.
How to season polenta ?
To multiply the calories of polenta, however, are the condiments with which it is usually brought to the table: braised, stews, but especially cheeses such as gorgonzola, turn it into a dish full of saturated and heavy fat to digest. In contrast, mushrooms and vegetables add more fiber, further lowering the glycemic index. You can also combine it with legumes such as chickpeas and lentils. If you can, choose organic polenta, prepared with non-GMO corn.
