This is just a base red sauce recipe that I made with the crushed tomatoes last week.
A great tomato basil base to have on hand to simmer with zucchini, make an easy parma rosa, bake with beef...there are many ways to use it later.
Basil, however, helps alter positive ions into negative ions which helps with winter blues. It is a good plant to grow indoors, and really good to eat in the deep winter.
- 10 - 12 blanched and crushed tomatoes (or 2 quarts fresh canned tomatoes)
- 2 cups water (just add the liquid in the jars if using canned)
- 8 oz mushrooms, sliced (I like baby bellas)
- 1 medium sweet white onion
- 3 cloves garlic
- 2 bay leaves
- 1/2 t sea salt (or to taste)
- 1/2 t black pepper
- 1/4 C dried oregano
- 1/3 C dried basil
- 1 sm can tomato paste to add after simmering (or 4 beefsteak tomatoes blanched and pureed)
Put everything (except paste) in a pot and simmer for 4 - 5 hours...
Then add paste, stir and continue simmering while you prep your jars and get all your canning tools ready.
Making easy Parma Rosa...great pasta sauce, nice with eggs, fish, ravioli, shell fish
Mix
- 1 quart basil sauce with
- 1 pint Creamy Alfredo
- 1/2 C grated Parmesan
Warm until Parmesan is melted in well
Tomato Basil Zuchini
Just put 1 quart basil sauce in a pot with 2 - 3 good sized chopped zuchini, and simmer until zuchini is cooked. This is Great with fish...or just over rice too...
Meats
You can marinate beef, venison, elk and really any red meats in the basil sauce overnight. Then bake, or put in the crock pot...you can add in root veggies, or kale. What you add depends on taste, but it is a good healthy low maintenance winter meal.
This basil sauce will smell and taste super strong while you initially cook and jar it...but once you add in other ingredients later it ends up the perfect flavor.
