Power Pressure Cooker XL BBQ Ribs

This is a simple recipe that provides a lot of flavor for minimal time in the kitchen. Enjoy!

Ingredients:

2 racks of pork ribs
3 c. Sweet Baby Ray’s original BBQ sauce
2-4 c. of Apple Juice
1/4 c. of Apple Cider Vinegar
2 yellow onions, diced
2 tbs. heaping minced garlic
1 tsp. liquid smoke (best is from LEM)
1 tbs. chili powder
Directions:

Cut ribs into 3 rib portions and place them into Power Pressure Cooker XL (PPCXL). If frozen, no need to defrost. If thawed you can sear on Chicken/Meat setting once seared Add all ingredients in a bowl except BBQ Sauce and mix well, then add to the pot. Close the lid. Then press Chicken/Meat button and set Time to adjust to 40 Mins. You may, in this case, need to adjust time up or down depending on rib size and count. Once it is done, use the natural pressure release. Open the lid and ensure the ribs are tender and the meat is still on the bone. If not done, use the manual setting and cook for 5 more mins.

Remove the meat, cut ribs into individual pieces and put onto a large pan cover each with BBQ sauce then cover with aluminum foil in the oven at 400 degrees for 15 mins.
