INSTANT POT PPCXL CARNITAS

INGREDIENTS

1 (2 lb [907 g]) pastured pork loin
1 cup (240 ml) beef stock
1 orange, sliced in half
1 fresh jalapeño, whole
1 large red onion, diced
2 tsp (10 g) sea salt
1 tsp (2 g) cumin
1 tsp (2 g) onion powder
1 tsp (2 g) garlic powder
1/2 tsp black pepper
1 tsp (1 g) dried parsley
1 tsp (2 g) paprika
Handful fresh cilantro

To serve: Cilantro, diced tomato, onion and jalapeño slices

Power Pressure Cooker Settings

The default time is by pushing the selected button. Once the setting is selected Cook Time Selector has Medium and Well settings both which increase the time as below:
Time adjustment Can be used to add time to all defaults and Medium setting

Fish/Vegetable Steam Default is = 2 Min / Med 4 MIN / Well 10 MIN
Beans/Lentils Default is = 5 Min / Med 15 MIN / Well 30 MIN
Rice/Risotto Default is = 6 Min / Med 18 MIN / Well 25 MIN
Soup/Stew Default is = 10 Min / Med 30 MIN / Well 1:00 MIN
Chicken/Meat Default is = 15 Min / Med 40 MIN / Well 1:00 MIN
Canning Default is = 10 Min / Med 45 MIN / Well 2:00 MIN
Saute = Any setting most likely Chicken/meat

PREPARATION

Place all of the ingredients into the pot of your PC, squeezing the juice from the orange before placing them into the bowl. Secure the lid, close off the pressure valve and press the Meat/Stew or chicken meat button. Now press the “+” button until 40 minutes is displayed. Allow the cooking cycle to complete, and then NPR then remove the lid and shred the pork. You may need to adjust the cooking time for larger cuts. Serve with more fresh cilantro, diced tomato, onion, and jalapeño slices or rice or fajita style if desired.
