Hello there my dear friends of Steemit! I would like to share with you our common favorite dish after all those fatty foods around. You know, just like any grandmas, we tend to spoil our grandchildren by filling them with anything good and tasteful under the sun! Spoiling them a bit with my cooking makes the heart go fonder.
This time, I made fried boneless Milkfish with garlic fried rice.
As you can see, my grandson did not pick the molded garlic rice. He just wanted the plain natural rice to match the menu I prepared.
First, let's do the marinading of our fish before preparing our fried garlic rice in order to let the ingredients more time to absorb in the meat muscles hence giving it a more yummy taste.
Ingredients:
1 kilo Milkfish, de-boned and cut into halves
1 clove garlic, minced
1/2 cup vinegar
1/8 cup soy sauce or oyster sauce
1 pc. lemon, squeezed
1/tsp whole or powdered black/white pepper
Salt and seasoning to taste
To make things easier, it's best for you to have the fish deboned in the market. Well, the choice is yours of course.
Take note, do not scrape off the scales because it will prevent the meat from getting burnt.
You can simply cut or dissect the back on the middle part starting from the back fin going down the tail then up the head part. That will be the time to remove the internal organs.
Wash it thoroughly and avoid squeezing the bile or else your fish meat will become bitter. Though it's not poisonous, eating a bitter fish is the least you'd like to happen, right?
Next, arrange the dissected fish in a wide platter in flat position.
Sprinkle the minced garlic and spread evenly atop the meat.
Pour vinegar and sauce evenly
You can leave it there and let the ingredients absorb first while you prepare for your next task which is the Garlic Rice. You see, this preparation is especially made to make use of your cold rice or some left overs the previous night. To make a more palatable garlic rice, it is best to do more innovations such as blending it with mixed veggies. Anyways, there's a ready mixed veggie at the mall for your quick preparation though I make them myself.
Ingredients
- A bowl of rice or as needed, mashed
- 1-4 cloves of garlic, minced and thinly sliced
- 1 bulb onion, cubed (thin)
- Mixed veggies
- Bacon or ham, sliced
- Few pieces of hotdog, cubed or thinly sliced
- Seasoning to taste
First, fry the minced garlic until golden brown and crispy. Set Aside
Use the same oil and drop onion, bacon, hot dog and mixed veggies until half done
Then mix with rice, mixing gradually. Lastly, add seasoning to taste.
To make it more attractive to my kids and grandkids, I molded it via my cups, placed it upside down then placed the fried garlic on top.
At this time, I will have already fried my boneless milkfish at the other side of my stove. It is best to fry it last to keep its crispiness.
It's my favorite and I want it to look like we're in a resto bar. But this time, it's just along our terrace, with the cool wind, fresh and so inviting. Our friends often say that whenever they come to our place.
And before I forget, you can place a dip for your fish. Just put a little amount of balsamic vinegar and soy sauce plus squeeze a little amount of lemon. You may add sliced garlic with onion and tomatoes for more flavor enhancements.
