Looks super delicious! I've tried veggie rolls with cauliflower once, but the rice alternative did not taste that creamy but rather dry, any advice?

Yes, the cauliflower rice needs some help on its own. I recommend making a nut/seed spread and mixing it with the cauliflower rice. It also makes the mixture stickier like sushi rice. cashews, sunflower seeds, pumpkin seeds, almonds all would work.. blend with a little coconut milk, seasonings, etc into a thick paste and then mix it with the cauliflower.
