Mexican Sopes
INGREDIENTS:
three cups masa harina
one tablespoon salt
two cups warm water
one quart oil for frying
INSTRUCTIONS:
Whisk masa harina and salt together; mix enough water into mixture till dough is smooth and holds together. Form dough into two inch balls. Flatten each ball to a half inch thick circle.
Fry dough in the hot oil till sopes are just lightly browned, about thirty seconds per side. Remove sopes with tongs and place on a paper towel-lined plate; cool just till sopes can be handled. Pinch the edges of each sope together forming little 'boats'. Return to hot oil and fry till golden and cooked through, one to two minutes.
