Made coleslaw for a light lunch today. Used my Kuvings SV500 Vacuum Blender to make the mayonnaise. It was a bit runny as I had used whole egg instead of just the egg yolk, but a runny mayonnaise is not a problem for coleslaw.
An experienced Austrian chef once told me that pineapple was his secret ingredient in coleslaw as it increases the acidity level whilst adding some sweetness without making the coleslaw sour.
