Middle Eastern cuisine comprises of food eaten by the people of the various countries of the Middle East. The cuisine of the region is diverse while having a degree of homogeneity. Some commonly used ingredients include olives and olive oil, pitas, honey, sesame seeds, dates, sumac, chickpeas, mint and parsley.

Ingredients for Zatar Bread Recipe
Zatar spice 1 tablespoon
Refined flour (maida) 2 cups
Yeast 1 teaspoon
Castor sugar
salt half teaspoon
Olive Oil 2 tablespoons
Method
Step 1
Take yeast in a bowl. Add castor sugar and 2 tablespoons warm water, mix and set aside to activate.
Step 2
Take flour and salt in another bowl and mix. Make a well in the centre, add activated yeast and mix.
Step 3
Add some water and knead into a dough. Add 1 tablespoon olive oil and knead into a soft dough. Cover with damp muslin cloth and set aside to prove for 20-25 minutes.
Step 4
Preheat oven to 180° C.
Step 5
Transfer the dough on the worktop and knock back to release excess air. Divide into equal portions and shape them into balls.
Step 6
Dust the worktop with some flour, roll out each portion into ½ cm thick discs and place on a baking tray.Place the baking tray in the preheated oven and bake for 5 minutes.
Step 7
Take zatar spice in another bowl. Add remaining olive oil and mix well.
Step 8
Remove tray from oven, apply some zatar spice mixture on top, place the tray back in thepreheated oven and bake for another 5 minutes.
Step 9
Serve hot.
