1 pound small potatoes washed and sliced (see picture below) do not slice all the way through.
3 teaspoons olive oil
Salt and pepper to taste
1 tsp dried oregano and thyme
Method:
Heat oven to 400 degrees.
Toss potatoes in 2/3 of the olive oil, salt and pepper, thyme and oregano mixture (Make sure all are well coated).
Put on a lined pan.
Roast for 15 mins and take out of the oven. They should have opened up by this time.
Pour the remainder of the oil over the potatoes and return to oven.
Bake for another 15 mins or until potatoes golden and crispy.
Serve warm with your favorite condiment.
