During this time of FLU, we all need to be more careful what we are eating. Almost everyone
knows that chicken broth and even chicken soup are good to bring us back onto our feet again
from a bout of Flu. So, here's my recipe that is a sure help to bring anyone back to life again.
Begin with a gallon and a half of filtered water poured into a large pot.
1 teaspoon of sea salt,
1/2 teaspoon of black pepper,
I have purchased 10-12 Organic Chicken legs,
5 large organic carrots,
4 stalks of organic celery,
1/2 large organic cooking onion,
some fresh organic parsley (home grown or dried if you don't have fresh),
3 handfuls of egg noodles,
Begin by bringing water to a boil and add sea salt and pepper
Add all chicken legs, making sure water covers them.
Let them cook for 15-20 minutes or until you see the skin loosening off leg.
Once legs are not pink or bloody, take them out of water and put them into a large bowl.
Let them cool
In the meantime:
Cut the carrots and celery into small pieces, dice onion and snip parsley into the pot.
Cut meat off of legs into small pieces and put all back into the pot with vegetables.
Put burner on medium until carrots are cooked thoroughly.
Add the noodles, stir them into mixture and then cover.
Turn down the heat to low.
After 5-10 minutes, the noodles should be done.
Ladle soup into pretty bowls and serve with fresh bread with butter.
Any soup you have left over, you might put into a container in the refrigerator for the next
day, or I like to freeze at least 2 bowls for something yummy for the next week or so. Either
way, make sure you label the container, so you know what's inside.
