This is a way to easy to make Coconut Ice Cream.
I usually goto a small Asian supermarket near my house to get 2 cans of the pictured Coconut Cream "my personal favorite brand, don't waste money on the walmart brand" it must be cream and must not be fat free or reduced fat, leave the cans with the writing facing up in the fridge overnight VERY IMPORTANT STEP, also you need 1 can of condensed milk pictured "or your choice".
you will also need some sea salt your choice just don't use the thick salt fine salt is best, and some vanilla extract or Rum flavoring. if you want the full coconut effect you can add some shaved coconut if you want like quarter to half cup.
Get a good sized mixing bowl and I suggest a electric mixer it's way easier than manual mixing.
Step 1 to start get your 2 cans of coconut cream out of fridge and turn them upside down now and open from the bottom, the cream has settled to the bottom and the milky water will be separated now. when you open the can you will see the thick cream scoop out only the cream try to get the least amount of the milk, water into your bowl. use a fork to get it out so the majority of liquid falls back into the can.
step 2 add half the can of condensed milk to the bowl "or your desired sweet tooth desired" this is sweet milk warning.
step 3 add 3 pinches of sea salt not required but adds to it, and 1 to 2 teaspoons of vanilla extract or to your liking.
step 4 blend everything together in your mixing bowl for about 1 minute on medium speed until it's fluffy and put into your bowl and let the ice cream sit overnight in the freezer.
If you choose to make paleta popsicles then use your choice of a mold and spray the mold a little with coconut oil cooking spray "makes getting them out easier" and then pour the mix you made into each mold put a stick in it let it sit overnight.
I will warn you that when this ice cream freezes it will be hard like ice let it sit on your counter for about 20 minutes or until you can scoop it out. It' rich and creamy and oh so good. I tried many different brands of coconut cream for this recipe and the brand pictured above tastes the best plus the price is great $2.50 each can and the can is almost full all the way with cream. The reason I say avoid the walmart coconut cream is the can never even has half a can of cream and it's clear water when it seperates and the flavor is nothing like the Chaokoh brand.
