Want a tasty (pasta) salad? Then try my favorite variant with, among other things like, pesto, rocket and cucumber. Super tasty and ready in 20 minutes! The pasta salad is delicious as a quick supper, as a side dish or as a lunch. Make a nice large amount so that you also have something for the next day.
Recipe for 4 people
Time: 20 min.
NECESSITIES:
300 gr of pasta
5 tomatoes
2 (forest) onion
2 tbsp pesto
2 tsp Italian herbs
2 tbsp creme fraiche
75 gr of rocket
half to 1 cucumber
salt pepper
150 gr chicken strips or possibly ham strips
PREPARATION METHOD:
First put a pan of water and cook the pasta cooked according to the method of preparation on the suit. Cut the tomatoes, spring onion and cucumber into pieces. When the pasta has finished cooking, you can possibly rinse the pasta with some cold water. Then mix the pasta with the pieces of tomato, (bunch of) onion, crème fraiche, cucumber, rocket, the chicken strips and the pesto. Season to taste with salt, pepper and Italian herbs. Cover the dish with the pasta salad and store the pasta salad in the refrigerator until you serve it. Delicious as lunch, as a side dish with the bbq or as a quick main course.
