Today i'll be showing us how to prepare pepper soup.
The Nigerian pepper soup is a popular Nigerian recipe. It is such a flexible recipe as it can be served with numerous types of fish and meat. Thence there is the chicken pepper soup, the catfish pepper soup which has been enlisted on previous recipes, the goat meat pepper soup, the assorted beef pepper soup and the cow leg pepper soup.
Ingredients
- Chicken: 1 goat meat|assorted beef| cow leg
- Ariwo or ehu or calabash nutmeg - 4 seeds
- Chilli pepper (for tasting)
- Dry uziza - 2 teaspoons (optional)
- Onions - 2 meduim bulbs
- Salt (for tasting)
- Crayfish-2 table spoons of grounded crayfish
- Seasoning - 3 knorr cubes and 1 teaspoon of thyme.

Preparation and directions
While preparing chicken pepper soup, it is more desirable to use life chicken rather than frozen. The life parts of the chicken will give a better and fresher taste to the pepper soup. So wash thoroughly and cut up the whole chicken and set aside.
If you want to cook assorted beef pepper soup, then you should buy various parts of beef - best cut (shaki, liver and kidney, round-about)
Wash the offal completely especially the round-about which should be turned inside out during the washing, then cut this into small pieces, just big enough to be chewed in one go.For goat meat pepper soup and cow leg pepper soup, just wash and cut the goat meat or cow leg into average pieces. In this situation also make the pieces just big enough that it can be chewed in one go.
Now is the time to use the 'secret' ingredients. Using an old frying pan, roast the Ehu seeds (string continuously) till you can smell it. Don't worry you will know when it is OK to take it off because it has an extraordinary aroma.
Another means to know that it is OK, is to takes one of the seeds and try to take out the outer membrane if the membrane if the membrane comes off easily and effortlessly, them the Ehu is done.
- Peel off the membrane from the Ehu seeds and grate with a grate mill.
- Slice the onions into tiny pieces
- Rub the dry uziza with your fingers to break them into tiny pieces.
Cooking directions
- This cooking direction explains chicken pepper soup. To prepare goat meat pepper soup, cow leg pepper soup or assorted beef pepper soup. Just exchange chicken with goat meat, cow leg, or beef and offal respectively.
- Place the pieces of chicken in a pot and pour plenty water to close the contents of the pot. Add the stock cubes thyme and onions and cook till done.
Note
While cooking assorted beef pepper soup, you should cook the shaki for sometime before including the other beef parts, shaki is hard and will take longer to cook than other beef parts.
Cow leg is a strong meat part so when cooking cow leg pepper soup, you should use a pressure cooker if you have one. This will save you some electricity or gas.
By now, you will observe that some of the water has dried. Add more water to bring it to the level of the contents of the pot.
Add the ground Ehu, crayfish, dry uziza, chili-pepper and salt to taste. Ehu has some salty taste so you should add chili-pepper with care.
All the same,even though it is known pepper soup,you still want to be able to taste and enjoy the recipe itself. To much pepper will spoil it fornyou.Close the pot and leave to boil for 7 minutes and the pepper soup is ready.
Note:
Pepper soup should always be served hot. It can be eaten alone with chilled drink by the side.
