If it wasn’t for eggs I’d be vegan but there’s eggs, so I’m not! They are one of my favourite sources of protein and deliciousness and I LOVE them!
I only eat free range, organic eggs so I feel the environmental payoff is manageable, as is the ethical element of using animals for food. Anyway, with that being said I eat a lot of eggs & have no intention of changing that. Usually a boiled egg or two will suffice but every now and again I get fancy and whip out the poached variety and then on a much rarer occasion Mum spoils me by making her take on Shakshuka eggs. Oh my holy yuminess!!!
The recipe & ingredients are super simple & the whole process only involves a few steps but it does take a little while for the tomato to cook down if you want it as sweet as I like it.
All you need is:
- Eggs
- Canned tomatoes
- Pasata di Pomadora (or any other real tomato pasta sauce) this just speeds up the process as it’s already cooked down
- Garlic
- Onion
- Origanum
- Olive Oil
- Salt & pepper
As I’ve mentioned before my style of cooking, which was first influenced by my mum’s, is very experimental so the measurements are not exact & please feel free to play around to create your own version of this delicious breakfast treat...
Start off by frying 2 onions and a teaspoon of garlic with a little oil, once the onion has softened chuck in 2 tins of chopped tomatoes, about half your pasta sauce (or the equivalent of one can) and a generous pinch of origanum then cover your pan, leaving it simmering on a low to medium heat. Check and stir once every few minutes till the tomatoes have lost their shape and you’re left with a chunky sauce. Use a spoon to create holes in your tomato sauce into which you crack your eggs before covering once again and leaving to poach. Depending on your preference (and the heat of your sauce at that point) leave them for three to six minutes before serving. Season with salt & pepper & enjoy!!!
You can add green pepper & spinach to the recipe with delicious results but if you’re looking for a simply sweet & delicious breakfast, try this uncomplicated version & let me know what you think!!
