Delicious Semolina Cake Recipe

Ingredients

1 cup Olive OilSemolina Cake Slice

1 cup Milk

3/4 cup Sugar

3 tsps Baking Powder

Vanilla Sugar

3 cups Semolina

3 Eggs

1 tbsp Rose Water

Almonds, boiled, removed from skin and halved (optional)

Ingredients for the Syrup

2 cups water

2 cups Sugar

2 tbsps Rose water

Cinnamon Clove

Method

1.In a large bowl combine the sugar and oil, whisk together.
2.Add in the eggs until pale and creamy.
3.Alternately add in the semolina and the milk. Whisk until the semolina and milk has been combined.
4.Fold in the rest of the ingredients, the baking powder, vanilla sugar and rose water.
5.Pour the mixture into a pyrex or baking tin.
6.Once the mixture has been poured into the pyrex, scatter the almonds over the cake.

Cooking Time: 1hour

For the Syrup:

  1. While the cake is cooking, make the syrup by bringing the water and sugar to the boil, add the cinnamon clove. Simmer for about 5 minutes before adding the rose water. Continue simmering for a further 3 minutes. Remove from the heat and allow to cool.
  2. Pour the syrup over the cake and let it cool before serving.
