Cheesecake Bites
INGREDIENTS
one and half c. Crushed Pretzels
half c. (one stick) unsalted butter, melted
three tbsp. granulated sugar
sixteen oz. cream cheese, softened
one c. powdered sugar
Juice and zest of one lime, reserving some zest for topping
two tbsp. tequila
one tsp. pure vanilla extract
salt to your preference
DIRECTIONS
In a large sized dish, blend together pretzels, butter, and granulated sugar till mixed. Press in an even layer into the bottom of the baking dish. Freeze for ten minutes.
Meanwhile, in a large sized dish using a hand mixer, beat cream cheese and powdered sugar till light and fluffy. Then, stir in lime juice and zest, tequila, vanilla, and salt till creamy and smooth. Spread evenly on top of the pretzel crust. Top with more lime zest.
Freeze till set, about one hour more. Once firm, eliminate from baking dish and slice into sixteen bite-size pieces. Keep in freezer till ready to serve.
