Ingredients:
- 1 small onion
- 2 to 3 cloves of garlic
- 2 sweet peppers or paprika
- 1 carrot
- 1 courgette
- 1 chicken breast
- 1/2 cup tomato puree
- Basil leaves
- 1/4 teaspoon cumin
- salt and pepper taste
- Spaghetti or any other type of pasta of your choice.
Preparation:
Cotar as small as possible, onion, sweet pepper or paprika and garlic and then fry over a fire until everything is very tender. Then add the carrot in squares and let it cook for 2 to 3 minutes under cover fire (this in order that the flavors come together and that the vegetables release their own juices). Then add the chicken breast previously ground (I grind it in my food processor) and sauté until the chicken changes color. Add the diced zucchini. Season with cumin, salt and pepper. Cover again for 2 to 3 minutes. Add the tomato puree, a little water if necessary and the basil leaves. Cook over medium heat for 10 minutes.
Cook the pasta, serve and enjoy.
You can add cheese when serving, I add freshly ground pepper.
