These are GREAT for FOOD PREP! I stick them in the freezer for up to 6 months. They are great for on the go. I just take one or two out of the freezer and eat them with veggies or rice!
*** RECIPE ***
Ingredients:
15.5oz can of chickpeas
15.5oz can of red kidney beans
1/3-1/2 cup of finely chopped carrot
1 green bell pepper, finely chopped
3 cloves of garlic, minced
2 tbsp flaxseed
6 tbsp water
2 tsp Sriracha
2 tbsp cumin
2 tbsp chili powder
Instructions:
- Combine and rinse beans in a medium sized mixing bowl. Let them soak in warm water while you chop the veggies. This helps them get a little soft.
- Finely chop carrots, garlic, and pepper.
- Mash the beans. You can mash them until they are pasty, or leave some chunky. I personally like my burgers a bit chunky.
- Add the chopped veggies to the mashed beans. Mix.
- In a small bowl, combine the flaxseed and water. Mix it, and allow it to sit for 5 minutes. This is your flax egg!
- Preheat your oven to 375 degrees.
- Add the Sriracha, cumin, and chili powder to the flaxseed mixture.
- Add the liquid spices mixture to the beans and veggies. Mix all together.
- Put foil on a baking sheet, grease it with whatever you use.
- Make patties on the baking sheet.
- Bake at 375 degrees. Bake for 10-15 minutes on each side. I tend more towards 15!
