CREAMY PARMESAN CARBONARA CHICKEN

Every once in awhile I like to make something new. Today I found this recipe and decided to go for it. So glad I did because it was was AMAZING!!!

Here are all the ingredients. We don't eat pork, so we used smoked turkey bacon instead of regular bacon. IMG_20170906_165804544.jpg

First thing we did was cut the chicken in half. If the chicken was thinner I would have left it alone. Cutting it in half helps us not over eat and cooks the chicken faster. IMG_20170906_170058431.jpg

I made a mixture of flour and parmesan cheese in a bowl. I also added salt and pepper instead of sprinkling it directly on the chicken. IMG_20170906_173153039.jpg

I dipped the chicken in the flour mixture until they were completely coated. IMG_20170906_173223161.jpg

While I was doing that, I had oil and butter getting hot in my cast iron skillet. IMG_20170906_172615804.jpg

When the oil was the temperature I needed I slowly added the chicken. IMG_20170906_173414437.jpg

I let it cook for about 10 minutes on each side. IMG_20170906_173653372.jpg

While the chicken cooked I chopped up onions and cut the bacon into strips. IMG_20170906_174017382.jpg

When all the chicken was cooked and set to the side, I added the bacon strips to the pan. It smelled so good at this point. ❤️ IMG_20170906_180331120.jpg

The recipe didn't call for this, but I'm super paranoid when it comes to chicken and it being cooked all the way. So I cut the chicken into strips. IMG_20170906_180104752.jpg

I placed the bacon on the same tray as the chicken. Less dishes is always better to me! IMG_20170906_181606689.jpg

I added the garlic and onions to the skillet. I basically just wanted the onions to caramelize. IMG_20170906_181521437.jpg

After the onions and garlic are soft I added my cream mixture. The recipe called for half n half but I didn't have that. So I substituted heavy whipping cream and milk. I doubled the recipe, so I did 2 cups cream and 1 cup milk. IMG_20170906_181554390.jpg

I let that simmer for awhile. After I noticed a few bubbles I added parmesan cheese. IMG_20170906_182423687.jpg

I used my hand mixer and mixed it all in. I also added some cornstarch and water to thicken it. I ended up getting it to thick and had to add a little more cream. IMG_20170906_182816583.jpg

I added the chicken and bacon once I had the consistency that I wanted. IMG_20170906_182840059.jpg

I let that simmer for about 15 more minutes.

Noodles and some steamed veggies were great sides to add.

I have to say it was a pretty great dinner! It wasnt hard to make either which was a total bonus! @dwells gave it a 9.5 rating.....which means I will be making it again! 😁

Looks delicious! Have you tried beef bacon yet? Since I stopped eating pork a while back, Lev 11, I found this to be an excellent alternative, much better than turkey. I had to go to a butcher shop to find it, since I go there for most of my other meats it is easy to get and if they don't stock it they will carve it right then and there to any thickness I want!

That's exactly why we don't eat pork @simms50. We have had beef bacon and love it! We don't buy it often because it's so expensive. But it is delicious!

You are right...it can be expensive at times. I can't get it every time but it is so good when we do! Can you find it at a "regular" store or do you have to go to a butchers? Also I can't even stand the smell of pork anymore and can't even imagine eating it ever again! Eating what the Father calls food is ALWAYS a good idea! :-D Shalom!!

You can find it at whole foods. I like the smoked wood that we use for this recipe. It's really good for being turkey. I was never a fan of pork bacon. Its always had a stinky smell to me. Yes I agree, eating clean is a great idea, not to mention healthy! Shalom to you and your family also!
