A Delightful Sea Scallop Dinner On A Dreadfully Rainy Day

My thoughts and prayers are with Texas and those suffering the effects of Harvey. Living in Southwest Florida, we are empathetic to what our Texas neighbors are going through. Currently we are dealing with a tropical wave, aka a no-name storm that's sitting on top of us. Those with trucks can get out and about. Me and my low rider car and I staying put. So what to do? Enjoy a nice meal and share a photo and recipe with you.

I was in the mood for some scallops and my sweetheart of a hubby picked some up for me when he went out to fill up gas cans. (He has a nice, high riding truck. And yes, gas prices are going to go up as another result of Harvey.) The Publix price tag had a recipe on it that I had not yet tried. I made a few modifications and voila, a healthy, delicious dinner.

Easy Sea Scallops Over Shirataki Noodles

1 lb sea scallops
1 tsp olive oil; added some additional olive oil spray
1/2 cup baby portobello mushrooms
1/4 cup green onion, chopped
1 clove of garlic, minced (or if you're like me, maybe 2 cloves ;) )
1/2 tsp white pepper
1/2 cup dry sherry
1/4 cup parsley
Red pepper flakes, salt and pepper to taste

For noodles: 2 bags of House Shirataki Noodles; garlic powder; red pepper flakes and olive oil spray

Heat oil in a skillet over medium heat. Add mushrooms, green onions, garlic, white pepper. Saute until mushrooms are tender. Turn the heat up to high add scallops and sherry until the sherry is reduced by half. Turn the scallops every minute or so to give them a nice light brown sear and glaze. Top over warmed shirataki noodles. Add crushed red pepper, salt (love pink Himalayan salt) and fresh ground blacked pepper to taste. Parsley to garnish.

Shirataki noodles preparation:

Empty noodles in a colander and rinse with cold water. Drain. Place on paper towels or lint free kitchen/prep towel and squeeze out water. Spray nonstick pan with olive oil spray; add noodles, garlic powder over medium heat to warm them and remove any additional water.
