Preparation:

Sift flour, cornstarch and yeast with a sieve, then add to the bowl of the yolks mix well, until there is a smooth dough and no lumps, then add half of the whites mounted and with a spatula and enveloping movements, from below to up and from the inside out, we mix well. We add the other half of the clear ones that we have reserved and we finish mixing with enveloping movements. We must have a soft and fluffy dough. We grease our mold with butter or margarine, pour the dough and take it to the oven, the cooking time is 45 minutes, depending on your oven, after 35 minutes you can enter the toothpick to know if it is ready, if it comes out clean, it is ready if not, leave it a little more. When it is ready remove from the oven, let cool 5 minutes in the mold, and then unmold on a rack and let cool completely.
