INGREDIENTS FOR 4 PORTIONS :
4 quite large aubergines
tomato sauce
2 large mozzarella
salt
pepper
basil
extra virgin olive oil
RECIPE
Cut the aubergines into fairly thick slices and add salt.
Season the tomato sauce with salt, pepper and a little oil. Chop the mozzarella after having drained them well.
Line a baking sheet with parchment paper and arrange the slices of aubergine so that they are far enough apart.
Spread the tomato puree and the mozzarella on each slice of aubergines. Add any salt and pepper to taste.
Bake in preheated oven at 180 ° for 10-15 minutes or until the aubergines are well cooked and mozzarella also. Serve immediately or allow to cool slightly, adding perhaps some fresh basil.
